This is one of my favorite dishes lately! It is super yummy, and super fast and easy. I feel like I make it all the time now. The small shells are the best, and it looks really cute when the peas get all nestled up inside of them.
Serves 8
You will need:
- 1 pound small shell pasta
- 2 cans chickpeas
- 7 oz. vegan pesto (I like the Sprouts Organic Vegan Basil Pesto)
- 4 cups frozen peas
Steps:
- Boil a whole bunch of water. Cook the pasta until itβs al dente.
- Add the frozen peas to the boiling water
- Drain the beans and add them to the water
- Let it all simmer for a minute until the peas are thawed and warm
- Drain it all
- Mix in the pesto
- Salt and pepper to taste
- Enjoy!
