Look I don’t usually get excited enough about a dang sandwich to write up a whole dang blog about it but I’ve been making this sandwich from Cara Mangini’s The Vegetable Eater.
I mean on paper it is a mere cucumber sandwich. But do not scoff. This is not a dainty tea party delicacy. No it is a hearty meal. Probably because it has cheese and avocado and pesto on it so it’s good and fatty.
Anyway try this sandwich!
Recipe
Ingredients:
- bread
- soft spready cheese. try some of that laughing cow stuff!
- arugula, 4 c
- vinaigrette
- avocado
- pesto
- cucumbers
- salt and pepper
Steps:

toast! that! bread!

slice! that! avocado!

make cucumber planks: cut into thin slices on a sharp diagonal.

toss arugula with 4 t vinaigrette

spread 2 T cheese on one slice of bread. cover with cucumber slices. sprinkle with salt, drizzle with 1 t of vinaigrette

layer avocado on top of cucumbers.

add 1 c arugula on top of avocado.

spread 2 T pesto on the second slice of bread.

assemble sandwich. cut in half. enjoy!
