Here’s the deal with vegan quesadillas. Everybody seems to think that you need some kind of vegan cheese crumbles or shreds, or one of those cashew based “cheese” spreads. And I’m here to tell you that that is a whole bunch of phooey.
Stop trying to make meat and cheese vegan! Just eat normal food!
Seriously, just skip the cheese. This recipe uses some garlic hummus instead and it is delicious. You could also use some refried beans. But I think hummus is the perfect amount of creamy and spreadable.
You will need:
- black beans, 1 can
- corn
- roasted red bell pepper
- hummus
- flour tortillas
- cumin
- chili powder
- paprika
- garlic powder
- onion powder
- cayenne pepper
Steps:
- Make the filling: Saute the beans, corn, and pepper with a tablespoon of oil in a large saute pan. add the spices to taste, with a little salt and pepper. 3 - 4 minutes
- Set the filling aside in a bowl. wipe out the pan and add a drop of oil.
- return the pan to medium heat and add a tortilla. line half of it with hummus, add the filling, and fold it in half. Cook on each side until the tortilla is evenly browned. Transfer quesadilla to a cutting board. Repeat for each tortilla.
- Cut quesadillas into quarters or thirds.
- Serve and enjoy!
